A native Spanish speaker, Su-Nui Escobar develops healthful recipes with authentic Latino flavors. Su-Nui’s recipes have been featured in dozens of cooking segments in popular Hispanic television morning shows.
Dr. Escobar teaches at Nova Southeastern University-Dr. Kiran C. Patel College of Osteopathic Medicine. She is also a dietetic internship director at Larkin Community Hospital.
Su-Nui is a spokesperson for the Academy of Nutrition and Dietetics and was the 2019-2020 president of the South Florida Academy of Nutrition and Dietetics and won the Greater South Florida Dietitian award by the same organization.
Escobar enjoys traveling and has taken cooking classes around the world. In her spare time, she runs half-marathons. Escobar graduated from the University of Wisconsin-Stout, earned a doctoral degree from the University of North Florida.
